Ingredients
* 1/4 cup water
* 2 Tbsp. gelatin
* 1 1/2 cups coconut milk
* 2 cups pumpkin puree
* 1/2 cup maple syrup
* 1 1/2 tsp. ground cinnamon
* 2 Tbsp. gelatin

* 1/2 cup maple syrup

Preparation
1. Place the water in a bowl and sprinkle the gelatin over it. Set aside.
2. Gently warm the coconut milk in a small pot over a low heat – do not let it come to a boil.
3. Whisk in the water and softened gelatin until combined.
4. Remove from the heat.
5. Add the pumpkin puree, maple syrup and cinnamon to a blender and blend until smooth.
6. Add the gelatin-coconut milk mixture to the blender and blend again.
7. Divide mixture into 4 serving dishes.
8. Chill for at least 60 minutes.
