Ingredients
* 1 large head of cauliflower
* 2 Tbsp. coconut oil
* Salt and pepper to taste
* 2 Tbsp. coconut oil
* Salt and pepper to taste
Preparation
1. Remove outer leaves of cauliflower and break into large pieces.
2. Shred cauliflower in a food processor, or on a box grater.
3. Melt oil in a skillet over medium heat.
4. Add cauliflower.
5. Season with salt and pepper.
6. Sauté for 5–10 minutes, stirring occasionally until cooked through.
7. Serve as you would rice.
8. Feel free to stir additional herbs, spices or flavorings into the cooked 'rice'.
